Tuscan Parmesan Pillows

"Mashed potatoes and green peas go well with this lovely dish, or serve with lemon rice. I got this out of a Woman's Day magazine."

• Serves: 6

ingredients

• Meat Mixture

• 1 1⁄2 lbs ground beef round
• 3 garlic cloves, crushed
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon fresh coarse ground black pepper
• 1 cup grated parmesan cheese
• 1⁄3 cup chopped parsley

• Other Ingredients

• 1 tablespoon olive oil
• 1 tablespoon butter
• 1⁄3 cup chopped parsley
• lemon wedge

directions

1. Mix meat-mixture ingredients until well blended.
2. Shape into twelve 1 1/4-inch thick patties.
3. Let stand 15 minutes.
4. Heat oil and butter in a large heavy nonstick skillet over medium-high heat.
5. Add patties and cook until well browned on both sides and no longer pink in centers, about 5 minutes each side.
6. Sprinkle with remaining parsley.
7. Serve with lemon wedges to squeeze over the patties.
8. Serves 6.

I made as stated except I didn't add the 2nd 1/3 cup of parsley. Just super easy to put together and a nice NEW alternative to burger or meat balls, sort of in between. I served with Lemon Basmati rice and a Greek Salad. Thanks for sharing.

This was amazingly good. The simplicity of this recipe led to an unexpected taste sensation! I think I will squeeze lemon on all my burgers! I was unsure where to add the parsley so I just topped the burgers with it. I used a combination of fresh parmesan and asiago. Thank you so much Sharon!

I had to restrain myself from adding breadcrumbs and an egg to this recipe because that is the way I make my meatballs and sometimes meatloaf as well. But this recipe did not need those additions - it was great as is! Adding the lemon and parsley at the end really made for a wonderful and different flavor. I think the parsley listed twice is probably an error, right? Thanks so much for posting this Sharon.

These are really good, they're like meatballs but with cheese in them. Quick and easy to prepare and they went well with mashed potatoes and a great big garden salad. Thanks Sharon, I'll be doing this again!
