Swedish Limpa Bread- Abm

"Limpa has always been one of my favorite breads, and now I can make it in the bread machine! I use the dough cycle for this, then rise and bake in the oven. Mom always includes the orange rind, but it's not my favorite, so I leave it out. My house tends to be a little cool in the winter, so I use the oven light to proof my dough. If your house is warmer, then rise in whatever manner works for you. Cooking time includes the bread machine cycle time, plus baking time. Prep time includes rising time."

  • Place all of the ingredients into your bread machine, following the instructions for you particular model.
  • Set the machine for the dough setting, and walk away.
  • 30 minutes before the end of the cycle, place a loaf pan or baking sheet in your oven. Turn on the light, and shut the oven door.
  • When the dough cycle is done, remove the dough from the machine, and place in the loaf pan, or shape and place on the baking sheet.
  • Place the dough in the warm oven, and let rise for 20-30 minutes.
  • Remove the loaf from the oven, and preheat the oven to 400°F.
  • Bake the loaf for 25 minutes.
  • Remove from the oven, and let cook on a rack.

  1. Tremendous bread with lovely exterior and soft interior. I followed this exactly, including the orange rind which went beautifully with the caraway, and fennel seed.   2. Excellent loaf of bread. I used bread flour and couldn't find rye flour so I used whole wheat. Also omitted the orange rind. Other than that made as written and made the dough in the bread machine and baked it in a loaf pan. This is now one of my top two bread recipes :) Thanks for posting. Made for SSaSSy's ZWT 6
     
  3. I wish you all could smell this bread. I made the dough in the bread machine and baked it in a loaf pan. I skipped the orange rind and fennel. This made a perfect loaf of bread with great texture and wonderful taste! I'll put this in my tried and true file because I'm certain I'll make it often. Thanks for sharing. Made for ZWT 6.

  5. Ooh, thanks for the super recipe!! Worked out perfectly, made as directed, and DH, who is a big bread eater, has declared it excellent, and it toasts well too. I split the dough to give me two small loaves, before letting them rise for the final time, and I gave the one loaf to a friend who also loved it. A real keeper, thanks, Ingrid! PS I also omitted the orange peel!

I live near Seattle, WA with my husband of 11 years and our pet ferrets. We're lucky enough to own a home with a big, south facing yard which is great for entertaining. It also allows me to have a big vegetable garden where I grow most of my own herbs and a lot of the vegetables we eat in the summer, as well as a bunch to share with family and friends. In my professional life, I'm an accountant- but what I really love to do is cook and eat! Most of my ability is self-taught. I love to experiment with new recipes and techniques, most of which I get from watching way too much food tv and reading foodie magazines. Recently I decided to start a personal chef business and have cooked for a few clients. I love the challenge of designing a menu to fit a family's specific tastes and needs, and then cooking it for them to enjoy. For me, cooking is an expression of love. Everyone needs to eat, but food is more than just fuel for the body, it can nurture and comfort ~ give us a memory from childhood, or a retreat when we feel ill. I always think of the people who I'm cooking for when I make a dish, and there is no better compliment than when someone enjoys the food I've made especially for them. I also like to do OAMC- style cooking, but instead of using it mainly to get dinner on the table, I focus on getting lunch in the bag! Eating out is far too expensive in both dollars and nutrition to make a habit of, yet I want a hot, satisfying meal to enjoy in the middle of the day.
