Australia Day Lamb Chops

ingredients
- 8 lamb chops
- 1⁄2 cup olive oil (or enough to cover the bottom of your marinade container)
- 1⁄2 a lemon, juice of
- 2 garlic cloves, crushed
- 1 teaspoon oregano
directions
- Mix together all ingredients, apart from the lamb.
- Pour marinade over lamb, cover, and leave to marinade at least an hour we leave ours all day).
- Grill or BBQ on high, fr 3 minutes each side, or until cooked to your liking.4.

We really liked the marinade but next time I would use fresh oregano and also add some fresh rosemary (we are fortunate that both grow abuntantly all year round and I did double the garlic as we just love the fresh garlic we have harvested). I cooked on an indoor grill (using 12 loin chops for 4 which were served up with 2 recieving 4 and the other 2 persons got 2 each which suited us). I cooked on an indoor electric ridged grill 5 minutes per side which gave a well done to the smaller chops and a slight pink to the larger ones so everyone got what they liked. Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
