- 1 cup vegetable oil
- 2 cups sugar
- 3 -4 eggs, well beaten
- 3 cups apples, diced
- 3 cups flour, sifted
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1 cup pecans, chopped (or more)

For the Sauce
- 1⁄2 cup dark brown sugar
- 1⁄2 cup granulated sugar
- 3 tablespoons flour
- 1 pinch salt
- 1 teaspoon lemon juice
- 1⁄2 cup water
- 1⁄2 cup butter
- 1 teaspoon vanilla
directions
- Preheat oven to 325 degrees F.
- Mix all cake ingredients (up to and including the pecans) together in a large bowl.
- Pour the mixture into a greased and floured tube pan.
- Bake for 1 1/2 to 2 hours, or until a thin knife or toothpick inserted into the center comes out clean.
- For the Caramel Sauce: Stir all ingredients (below the pecans) in a saucepan on medium heat. Bring to a gentle boil and cook, stirring constantly until thickened, about 5 minutes. Serve warm sauce with slices of cake.
