Mallory Mashers/Cauliflower

"A restaurant near my house started serving this, and it was so yummy, I had to ask what was in it! This makes a great veggie side, and with the cheese, kids will eat it without asking questions. Depending on your taste, you can use regular sour cream, light sour cream, or butter."

  • Cut cauliflower into chunks and steam or boil until until it is very, very soft.
  • Drain water.
  • Use a potato masher to mash the cauliflower until it is fairly smooth (You can use a blender or food processor to get a very smooth result, but I like to keep a little texture).
  • Add cheese, sour cream, and salt to taste.

  1. I'm not a big fan of cheese so I mellowed the recipe down with low-fat mozzerella cheese and added a clove of roasted garlic and some pepper. Instead of sour cream, I used fat free plain yogurt. The results were a great sub for that mashed potato craving.
