  • Wash the potatoes, scrubbing with a brush, but do not peel, then dry with towel.
  • Using an apple corer, bore hole through the center of the potato and stuff the link into the hole.
  • Sprinkle potato with Kosher salt and wrap with aluminum foil, place over hot coals and cook until tender (approximately 1 hour, may be longer, depending on heat of coals).

  1. Thank you so much for a great, fun and easy recipe. These were so good! My husband can hardly wait for summer, we have fires every weekend with the neighbors and he was coming up with all kinds of ideas on sausage to put in these potatoes. I fixed this in the microwave- In a bowl with about 1/4 cup of water with the lid on and cooked on high for 13 minutes. Worked great!
     
  2. You can't get much easier than this. I did them in my oven and they turned out really tasty! My DH really enjoyed these, but he IS a meat and potatoes man and this fit the bill perfectly. I used Cumberland sausage for a nice spicy flavour. Thanks for a great recipe!
