- 1 cup butter, softened
- 2 cups granulated sugar
- 2 eggs, beaten for 30 seconds
- 1 teaspoon vanilla
- 4 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 cups zucchini, grated (drain in strainer for 1 hr. to remove extra liquid)
- 12 ounces chocolate chips
directions
- Cream together sugar and butter. Mix in eggs and vanilla. In a separate bowl mix all dry ingredients together well and slowly mix into creamed mixture. Mix in zucchini with a slow mixer till blended inches Stir in chocolate chips. Using a teaspoon, drop onto greased cookie sheet or parchment lined cookie sheet and bake for about 7 minutes at 350 degrees F.
