- 1⁄2 cup softened butter
- 3⁄4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 cup sour cream
- 1⁄2 cup chopped walnuts (optional)
- 2 -3 bananas (the banana peel should be nearly all brown)
directions
- Preheat oven to 350 degrees.
- Grease a loaf pan.
- In a large mixing bowl, with an electric mixer, beat together the butter, sugar, eggs, vanilla extract, baking soda, baking powder, sour cream and bananas.
- Slow beat in the flour until well mixed.
- Fold in walnuts.
- Pour into greased pan and bake for 45 – 55 minutes (depending on the size of the pan and how many loaves are baked at once).
- Start checking around 45 minutes by inserting a toothpick into the middle of the bread. The bread is done when the toothpick comes out clean.
