SALAD
- 1 (100 g) packet fried Chinese noodles
- 1⁄2 - 1 head Chinese cabbage (Wombok)
- 6 shallots
- 100 g roasted almonds
- 100 g pine nuts

DRESSING
- 1⁄2 cup caster sugar
- 1⁄4 cup white vinegar
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
directions
- In moderately warm oven, place pine nuts and slivered almonds, roast for 15 minutes or until golden brown.
- Into bowl combine sliced cabbage, shallots and noodles.
- Combine all dressing ingredients and mix well.
- Sprinkle nuts over cabbage, cover with dressing and serve!

Our neighbour gave us a huge wombok straight from her garden, so of course the first thing I did was turn to Zaar to find a recipe. Only ONE recipe for Wombok - but luckily it was a good one! I only needed enough for two and didn't have all the ingredients, so I'm afraid I did have to improvise a bit. I finely sliced enough Wombok for two, then added shallots, grated carrot, finely sliced red capsicum and half a bunch of roughly chopped coriander. For the dressing, I used 1 tbs sugar, 1/2 tbs white wine vinegar, 2 tsp soy sauce and 1 tsp sesame oil. I added whole, toasted, blanched almonds. I didn't have the Chinese noodles but will try adding them next time. This made a lovely, light, sweet coleslaw-y salad that went beautifully with some lamb chops marinaded in soy and mirin.
