- 1 (8 ounce) bag lentils
- 3 tablespoons olive oil
- 1 1⁄2 cups chopped onions
- 1⁄2 chopped carrot
- 5 garlic cloves, chopped
- 1 celery rib
- 1 bunch fresh thyme
- 1 tablespoon turmeric
- 2 teaspoons cumin
- 10 cups low-sodium chicken stock
- 2 ham hocks or 2 smoked turkey bones
- 1 tablespoon Greek yogurt
directions
- In a dutch oven or large stock pot, saute the onion, garlic, celery and carrot in the oil. Add all ingredients to pot and cook for 25-30 minutes or until soft on medium high heat, stirring often. Garnish with greek yogurt and serve.
