Whole Wheat Raisin Apple Bread

ingredients
- 2 (1/4 ounce) packages yeast
- 1 egg
- 1 cup warm milk
- 1⁄4 cup honey
- 1 cup raisins
- 1 cup finely chopped apple
- 1 1⁄2 cups whole wheat flour
- 2 1⁄2 cups white flour
- 1⁄2 cup cracked wheat
- 1 beaten egg yolk
directions
- Soften yeast in ½ c warm water.
- Mix egg, milk, honey, and ½ tsp salt.
- Add yeast, raisins, and apples.
- In large bowl mix whole wheat flour and 1 ½ c white flour.
- Add milk mixture.
- Mix well.
- Stir in cracked wheat.
- Knead in remaining flour.
- Let raise till double in bulk.
- Punch down.
- Shape into loaves.
- Let raise till double.
- Bake at 375° for 30 minutes.
- Cover with foil after first 10 minutes.
- Remove from pan and cool on wire rack.

I tried this in the bread machine. I had a passing thought while making it, wondering why there was no salt in the recipe. The flavor is VERY bland; I think this might be worth trying again (because of the healthy ingredients especially) but adding 1-2 t salt. It will still make good french toast, I think.
