Whole Wheat Banana Nut Muffins

  • Peel the bananas and add to mixer - turned on medium speed. Begin adding wet ingredients.
  • In another bowl place all dry ingredients and stir together. Slowly begin adding to mixture in bowl. Once this is all mixed together spoon into greased muffin pans 3/4 of the way up.
  • Bake at 350 degrees for 20 minutes.

  1. A very tasty, yet still healthy muffin. I did make a few changes, but the result was a tasty, not-too-sweet muffin that tastes like banana nut bread. I added about a 1/2 tsp of baking powder in addition to the baking soda, omitted one of the eggs and substituted another 1/4 cup of applesauce instead. Also since the applesauce is sweet I only used 1/2 cup of brown sugar, but they would have been fine with the sugar as well. I also made as streusel topping with brown sugar, a bit of margarine and oatmeal to add a bit of texture and sweetness on top. Good recipe; I like the use of flax seed and applesauce instead of oil.
