White Chocolate and Lime Cheesecake

- 6 white chocolate baking squares
- 6 ounces ladyfingers
- 16 ounces cream cheese
- 1 cup sugar
- 1⁄4 cup lime juice
- 1 (1/4 ounce) envelope unflavored gelatin
- 2 teaspoons lime peel, finely grated
- 1 cup whipping cream, whipped

directions
- Melt chocolate in a double boiler.
- Halve lady fingers and line an 8 1/2 inch springform pan with them, rounded sides out.
- Beat cream cheese on lowest speed until smooth. Blend in chocolate and sugar, mixing well.
- Sprinkle gelatin over lime juice in a small saucepan. Allow 5 minutes for it to soften, then stir over low heat until gelatin is dissolved.
- Blend gelatin and lime peel into cheese mixture.
- Fold cheese mixture into whipped cream. Pour into pan.
- Chill at least 3 hours. Garnish with strawberries and lime slices.
