- 12 ounces ready-made bruschetta
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 4 ounces crumbled goat cheese
- 1⁄2 cup fresh basil leaf, julliened
directions
- Combine bruschetta and beans.
- Add basil and sprinkle with goat cheese.
- Serve with toasted baguette slices, parmesan crisps, or similar breads.

Yum! I served this as an appetizer on top of crusty italian bread. Absolutely delicious! It could be a wonderful lunch, with the protein from the beans. Made my own bruschetta out of tomatoes, basil, oregano, garlic, and olive oil. The only thing I might increase is the amount of basil leaves sprinkled on top, but I love fresh basil. My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures.
