Whipped Sweet Potatoes With Vanilla Yogurt and Crunchy Granola T

- 4 sweet potatoes (8 to 9 oz. each)
- 1 1⁄2 cups weight watchers nonfat vanilla yogurt
- 1⁄2 teaspoon pumpkin pie spice
- 1 1⁄2 teaspoons kosher salt
- 2⁄3 cup low-fat granola
- cooking spray, butter flavor
directions
- Wash sweet potatoes and place in oven on bottom rack.
- Bake potatoes at 350 °F for approximately 40 to 60 minutes, until they are soft to the touch.
- Remove potatoes from oven and allow to cool before removing the skin.
- Place warm sweet potato flesh in a mixing bowl.
- Add Weight Watchers® Vanilla Nonfat Yogurt, pumpkin pie spice and salt.
- Whip using wire whip attachment on medium speed for about a minute. Scrape sides down and whip on high for about 30 seconds or until all of the yogurt is mixed into the potatoes.
- Cover glass or ceramic baking dish (1 1/2 to 2 quart) with cooking spray.
- Scoop potato mixture into the prepared baking dish.
- Sprinkle granola evenly across the top of the potatoes and lightly spray with cooking spray.
- Bake at 350 °F for approximately 40 to 50 minutes (granola will brown slightly).
- Remove the pan from oven and serve.

I am a native Californian, born in the Los
Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
