- 2 lbs white potatoes, peeled and cubed (or any variety)
- 1 shallot, thinly sliced
- 5 tablespoons olive oil
- 3 tablespoons cider vinegar or 3 tablespoons white wine vinegar
- 1 tablespoon dried dill weed
- 1⁄4 teaspoon dried red chili pepper flakes (e.g. red anaheim, halaby, aleppo)
- 1⁄2 teaspoon salt
- 2 teaspoons sugar or 2 teaspoons honey
- 2 teaspoons German mustard (e.g. Lowensenf)
- 1⁄4 teaspoon black pepper
directions
- Boil the potatoes until fork tender; drain and place in a bowl.
- Whisk remaining ingredients together and pour over the drained potatoes. Toss and let stand for 5 minutes. Toss again before serving.
