  • 2 cups cooked chicken, shredded
  • 2 cups diced celery
  • 1 tablespoon grated onion
  • 1 cup mayonnaise
  • 12 cup slivered almonds
  • 12 teaspoon lemon juice
  • 1 12 cups shredded cheddar cheese, divided
  • salt, to taste
  • pepper, to taste
  • 12 cup potato chips, crushed

  • **I microwaved the celery a couple of minutes to slightly soften or you can saute in a little butter, to soften; otherwise will be quite crunchy. Mix chicken, celery, onion, mayonnaise, almonds, lemon juice and one cup cheese in a bowl; season to taste with salt and pepper; transfer to a greased 13 x 9 inch baking pan; spread out evenly.
  • Top with remaining cheese and chips.
  • Bake, uncovered, at 450 for 15-20 minutes, until hot and bubbly.
