  • 1 cup honey
  • 1 cup pouring cream
  • 2 12 cups walnuts, roasted
  • 1 teaspoon orange rind, finely grated (finely grated rind of one orange)

directions

  • Combine the walnuts and orange rind in a bowl. Set aside.
  • In a saucepan, combine the cream and honey. Heat over a medium heat, bring to boil, reduce heat and cook for 20 minutes or until it reaches 121°C (firm ball stage) on a sugar thermometer.
  • Pour the honey mixture over the walnuts, stir to combine.
  • Place tablespoonfuls on a lightly oiled oven tray.
  • Refrigerate until set. Store in an airtight container between layers of baking paper in refrigerator or in a cool place.

  1. Made for an after the game snack, for my sons soccer team tonight after the game, and they were GONE, though I managed to grab a couple.. Great flavor in these and loved the addition of honey. made no changes in these. Wish that I had doubled this thougfh. Made for Recipe Swap #44.
