Venison Dirty Rice

- 1 lb venison, steak cubed 1/2inch pieces
- 1 lb chicken breast, cubed 1/2inch pieces
- 2 (8 ounce) boxes zatarain's dirty rice mix
- 4 stalks celery
- 1 large onion
- 1 bell pepper
- 14 1⁄2 ounces chicken broth
- 3 jalapenos
- 15 ounces black beans
- 1 teaspoon ground black pepper
- 1⁄4 teaspoon salt
- 1 teaspoon cajun seasoning
- 3 1⁄4 cups water
- 1 tablespoon bacon grease or 1 tablespoon olive oil
directions
- chop the onions, celery and pepper finely.
- Brown the venison and chicken together in a medium Dutch oven or stew pot with a dollop of bacon grease or olive oil in the pan.
- add the veggies when the meat is mostly browned and saute together.
- add salt, pepper and seasonings.
- when veggies are browned nicely and softened, add the beans, water, broth, and rice mix.
- Stir well and allow to simmer about 25 minutes until the rice is done.
