ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 -3 small ripe bananas (as in, so mushy they are in their last leg)
- 1⁄4 cup applesauce
- 1⁄4 cup coconut oil
- 1⁄2 cup sugar
- 3⁄4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon pumpkin pie spice
- 1⁄4 teaspoon salt
- 1⁄2 cup raisins (optional)
directions
- Mash the bananas
- Mix in the remaining wet ingredients.
- Sift together dry ingredients and add to wet mixture.
- Mix in raisins if using.
- Mix until JUST combined.
- Pour into greased bread pan and bake at 350 for 45-50 minutes.
- When finished baking, invert onto cooling rack.
- Slice and enjoy!
