Vegan Low-Fat Banana Bread

"Moist banana bread that is low in fat but high in taste. Makes for killer french toast! IMPORTANT: always mix by hand until just combined. An electric mixer yields a tougher bread."

  • Mash the bananas
  • Mix in the remaining wet ingredients.
  • Sift together dry ingredients and add to wet mixture.
  • Mix in raisins if using.
  • Mix until JUST combined.
  • Pour into greased bread pan and bake at 350 for 45-50 minutes.
  • When finished baking, invert onto cooling rack.
  • Slice and enjoy!
