Veal Curry With Carrots

"I made this dish with ingredients I had on hand. It is a really quick meal which I served with roti - the combination worked really well and elicited responses of mmmm from the family as they were eating. I just buy the frozen roti from Indian shops, but I am sure there must be a nice roti recipe on zaar! The cumin gives this a really special taste, so add more if you like this spice."

  • Heat oil over medium high heat and brown veal, stirfrying till browned all over,.
  • Add curry paste and stir through, then add tomato paste,salt, leeks and cumin.
  • Add carrots and coconut milk and cook over medium heat for about 15 minutes or until carrots are soft and most of the coconut milk has been absorbed.
  • Sprinkle with coriander and serve with fried roti and sweet chilli sauce.
