- 300 g veal, thinly sliced
- 4 large carrots, grated
- 1 leek, chopped
- 1 cup coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon tomato paste
- 2 teaspoons oil
- 1 teaspoon ground cumin
- 1⁄4 teaspoon salt, to taste
- 1 tablespoon coriander, chopped (optional)
directions
- Heat oil over medium high heat and brown veal, stirfrying till browned all over,.
- Add curry paste and stir through, then add tomato paste,salt, leeks and cumin.
- Add carrots and coconut milk and cook over medium heat for about 15 minutes or until carrots are soft and most of the coconut milk has been absorbed.
- Sprinkle with coriander and serve with fried roti and sweet chilli sauce.
