Uncle Jake's Bran Muffins

"A recipe my whole family loves! We enjoy them with a bit of honey on top. This are also fun to bake in mini muffin tins."

• Yields: 60-72 muffins
• Serves: 2

ingredients

• 2 cups boiling water
• 4 cups all-bran cereal (Kellog's All Bran or Western Family Fiber Active)
• 1 cup canola oil
• 2 cups sugar
• 4 eggs, beaten
• 5 cups whole wheat flour (can do all-purpose or a mixture of both, Jake does half and half)
• 1 teaspoon salt
• 5 teaspoons baking soda (1 tablespoon = 3 teaspoons)
• 1 quart buttermilk
• 2 cups bran flakes

directions

1. Mix the boiling water with the 4 cups of bran cereal, and allow the cereal to soak up the water.
2. Mix in the oil, sugar, eggs, flour, salt, baking soda, buttermilk.
3. Fold in the 2 cups of bran flakes.
4. Bake in greased or lined muffin tins at 400 for 15-20 minutes.
