  • 3 -4 lbs chuck, roast. (If you can't find chuck, get rump)
  • 1 small piece salt pork
  • 1 (14 1/2 ounce) can clear beef broth
  • 14 cup chopped parsley
  • 1 teaspoon thyme leaves
  • 2 cloves crushed garlic
  • 6 carrots, cut in 1 inch pieces
  • 6 onions, peeled and cut in half
  • 6 potatoes, cut in half

directions

  • Brown chuck roast in salt pork.
  • add the can of beef broth and chopped parsley. Add thyme leaves, add garlic.
  • Simmer for 2 hours.
  • Add the carrots and the onions and simmer for 1/2 hour.
  • Add potatoes and cook for another 35-40 minutes.
  • Take out the meat and cut it down, take out vegetables and plate.
  • Add a roux to the gravy and serve.
