Turkey & Mushroom Meatloaf Patties

- 3 tablespoons olive oil
- 8 cremini mushrooms, chopped
- 8 shiitake mushrooms, chopped
- 1 shallot, chopped
- salt, to taste
- pepper, to taste
- 1 1⁄3 lbs ground turkey
- 3 -4 sprigs fresh sage, chopped (about 2 tablespoons)
- 1 tablespoon Worcestershire sauce
- 1⁄2 cup Italian seasoned breadcrumbs
- 1 egg, beaten
directions
- Heat a non-stick skillet over med-hi heat. Add 2 tablespoons olive oil, then chopped mushrooms & shallots & season with salt & pepper. Saute 5 or 6 minutes, until dark & tender. Remove from heat, transfer to a bowl.
- Place turkey in a mixing bowl. Make a well in the center of the meat. Add remaining ingredients & mushroom/shallot saute. Mix together.
- Form into oval patties, 1 inch thick.
- Heat 1 tablespoon olive oil over med-hi heat in pan, add patties & cook 6 minutes on each side.

I made this almost exactly as posted, using 4 sprigs of fresh sage. While I ended up with probably a generous tablespoonful, it was just the right amount. I think 2 tablespoons might be overpowering. I added a tablespoon of butter to the shallots and chopped mushrooms, which worked out perfectly. I also ended up adding an additional tablespoon of olive oil to cook the patties. The patties had a very nice flavor (almost reminiscent of Thanksgiving!). I just think these could have used a sauce or gravy to really take them over the top. While still pretty moist, the would benefit from something extra, especially if paired with potatoes, etc. Thanks for sharing! Made for Spring PAC 2013.
