  • Combine all the ingredients, except fruit and nut, and mix and knead them together by hand, mixer or bread machine till you have made a soft, shiny dough. Knead in the fruit and nuts, then form the dough into a ball. Place in greased bowl, cover and allow to rise for 1 1/2 hours, till it's puffy.
  • Turn the dough onto a greased or floured surface and form into a ball. Place it smooth side up in a greased brioche mold or 1 qt (or larger) souffle pan. Let the loaf rise for about 1 1/2 hours, till it's crowed about 1" over the rim of the pan.
  • Bake the bread in a preheated 350 degreee oven for 30-35 minutes, until deeply browned. Remove from oven, and leave in pan to cool for about 10 minutes before turning out onto a rack to cool completely. Dust with confectioners sugar before serving.
  • Variations - Divide dough into 4 pieces, place in mini brioche molds and bake for about 25-30 minutes.
