ingredients
- 1⁄2 cup milk, lukewarm
- 2 large eggs
- 4 tablespoons butter, softened
- 3 cups all-purpose flour
- 1⁄2 cup coconut milk powder
- 2 teaspoons instant yeast
- 2 tablespoons sugar
- 1 teaspoon salt
- 1⁄4 teaspoon coconut flavoring
- 1⁄2 cup dried apricot, diced
- 1⁄2 cup dried pineapple, diced
- 1⁄2 cup unsweetened coconut
- 1⁄2 cup macadamia nuts, diced
directions
- Combine all the ingredients, except fruit and nut, and mix and knead them together by hand, mixer or bread machine till you have made a soft, shiny dough. Knead in the fruit and nuts, then form the dough into a ball. Place in greased bowl, cover and allow to rise for 1 1/2 hours, till it's puffy.
- Turn the dough onto a greased or floured surface and form into a ball. Place it smooth side up in a greased brioche mold or 1 qt (or larger) souffle pan. Let the loaf rise for about 1 1/2 hours, till it's crowed about 1" over the rim of the pan.
- Bake the bread in a preheated 350 degreee oven for 30-35 minutes, until deeply browned. Remove from oven, and leave in pan to cool for about 10 minutes before turning out onto a rack to cool completely. Dust with confectioners sugar before serving.
- Variations - Divide dough into 4 pieces, place in mini brioche molds and bake for about 25-30 minutes.

I live in the San Francisco Bay Area, in California. I am now a stay at home mom after trying desperately for 9 years. With the love and generosity of my sister-in-law who acted as our surrogate we now have a beautiful little boy, Ian. I love to camp and go jet skiing with my husband and our families. We have a wonderful chihuahua named Swiffy! She is always making us laugh. We enjoy spending time with our many nieces and nephews. I am an avid reader and I'm addicted to reality television!
