Tropical Rice

"This rice has such sweet and comforting aroma. Coconut, pineapple...you'll love it. I was looking for a rice dish to go with my Recipe #382313 and this is what I found on the net. To add an extra layer of flavor you could substitute some of the chicken broth with lime juice or orange juice and to make it spicy add a minced scotch bonnet pepper."

  • Rinse rice and add to a pot with the broth and coconut milk (and juice if you want) and cook until done. I use a rice cooker.
  • Fluff up the rice and add the pineapple, soy sauce, sesame oil and sugar. Mix well, taste and adjust seasoning.
  • Top rice with green onions, nuts and coconut flakes before serving.

  2. Wow! I have to give this a 5, even though we didn't use the pineapple. I LOVED the coconut milk in this. I've just started using it and am so glad I found this recipe. I did in the rice cooker, but had to add a bunch more broth and added some olive oil. I made with your recipe#313537 and both were a hit! Made for V@gan Swap 8-09. UPDATE: This made it into my Top Fav's of 2009 cookbook. Original Review 8-1-09.

  4. GREAT, GREAT COMBO OF INGREDIENTS here ~ The coconut & pineapple is always nice together, but the addition of the green onions & nuts took it up another notch! Another time I just might take the hint & substitute OJ for half of the chicken broth! Another nice keeper of a recipe!   5. Love the combination of flavors. Made using long grain Brown rice and macadamia nuts. It was a little sweet for our taste which next time will be easily fixed by adding half a scotch bonnet as suggested as an option in the description. Went well with Thai Chicken Skewers and can see it going well with Bahama Shrimp Skewers also. Thanks so much for the post.

I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
