  • Drain potatoes and slice in half; place in a buttered 13 x 9 inch casserole dish.
  • Combine sugar, cornstarch, salt and cinnamon in a saucepan. Blend in apricots, pineapple liquid and orange rind.
  • Bring to a boil, stirring constantly. Remove from heat. Stir in butter. Cool slightly; stir in pecans and pineapple.
  • Pour sauce over potatoes. Bake at 375* for 25 minutes or until sauce is bubbly.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now.
