Tropical Glazed Sweet Potatoes

- 3 lbs sweet potatoes, boiled and peeled
- 3⁄4 cup firmly packed light brown sugar
- 1 1⁄2 tablespoons cornstarch
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon ground cinnamon
- 1 cup canned apricots, pureed (with syrup)
- 1 cup crushed pineapple, drained (1/3 cup liquid reserved)
- 2 teaspoons grated orange rind
- 2 tablespoons butter
- 1⁄2 cup chopped pecans
directions
- Drain potatoes and slice in half; place in a buttered 13 x 9 inch casserole dish.
- Combine sugar, cornstarch, salt and cinnamon in a saucepan. Blend in apricots, pineapple liquid and orange rind.
- Bring to a boil, stirring constantly. Remove from heat. Stir in butter. Cool slightly; stir in pecans and pineapple.
- Pour sauce over potatoes. Bake at 375* for 25 minutes or until sauce is bubbly.
