Three-Pepper Steak

- 1 - 1 1⁄4 lb beef flank steak
- 1 yellow bell pepper
- 1 green bell pepper
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon red pepper flakes
- 3 green onions, including some tops, chopped
- 2 tablespoons soy sauce
- 2 medium tomatoes, chopped
directions
- Trim all visible fat from steak. Place steak in a 3 1/2 quart slow cooker. Remove stems and seeds from yellow and green peppers. Cut into strips. Arrange bell peppers on steak. Sprinkle with salt. Top with red pepper flakes, green onion, soy sauce and tomatoes. Cover and cook on low for 6-7 hours or until steak is tender.

When DH takes one bite and says "tasty!" I know the recipe is good! This was so easy and there really is no "fuss" I used frozen peppers (red, yellow & green) which made it even easier. I was a little nervous about the fresh tomatoes (haven't ever used them in a crock pot) but my fears were unfounded. I did have to thicken the sauce with cornstarch, but that wasn't an issue for me. Will definitely make this again. Thanks for posting this. Made for Bargain Basement Tag.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
