Thai Lime Pork

"This was inspired by a dish at a Thai restaurant in Oklahoma City (can't recall the name). I got very close to the original, but not quite there. We had this with fried rice and Diet Ginger Ale, which was PERFECTLY complementary. ((I'm listing this the way I made it tonight and will add notes at the end for what I'll do differently next time.))"

  • Cut the pork chops into cubes or thin slices. Cook them in the cooking oil over medium-high heat.
  • While the meat is cooking, heat the sugar in a small pan until very warm to the touch. Add the water and stir. Add the lime juice and chopped jalepenos. Leave this mixture on low-medium heat to let the flavors meld.
  • Serve the sauce as a dipping sauce for the pork, or mix the two.
  • NEXT TIME I make this, I will use Ginger Ale instead of the sugar/water mixture. I will also cook the pork in some soy sauce. I will also look for a serrano or habanero pepper for a better flavor than the jalepeno.
