Thai-Style Grilled Chicken Thighs

"This is my first recipe - please be kind! My kids love it and when I take it to a BBQ everyone wants the recipe. It is a variation on one I found in epicurious a while ago. It is very easy and very yummy!!"

  • Combine all ingredients except chicken in a bowl.
  • Mix thoroughly.
  • Add chicken and leave to marinate at least one hour, preferably longer.
  • Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.
  • Ususlly you would expect 12 thigh fillets to feed 4 to 6 people- in my family the kids eat 4 each so this recipe serves 3.

  2. What kind of chilies? Usually for Thai is use bird chilies but a tablespoon of those would be HOT! A Fresno chili? Thanks! MaryAnne
     
  3. What does it mean minced chili? Is it a fresh red chilli pepper you mince?
     
  4. Could you substitute boneless chicken breasts? Also, still waiting on the answer from the original poster, Barb, on which kind of chili pepper pepper to use. Is it the fresh or dried? Is it the green jalapeño?
     
  5. Substitute for fish sauce?

  1. I just made these for dinner. Suggestions: Marinate overnight(great flavors, need more time) Place on preheated grill(high) skin side down 5 min. Turn heat immediately to low. Cook on low (skin side up) additional 35 min. Keep in warm oven while you finish additional sides. Fantastic !!! <br/>p.s. I used Bone in, Skin on thighs.<br/>Thank you for the post!
     
  2. Wow oh wow oh wow!!!! May be one of my top grilled chicken recipes of my life! Grilled this on the grill, increased the garlic and used crushed red pepper flakes in place of the chili. AMAZING!!! 5 and 7 year old loved and I am not sure I've had a better chicken recipe on the grill EVER!!! Loved it!

  5. We absolutely love this marinade!! I made it a little different the 2nd time. I added a little oyster and hoisin sauce and tons of the grated ginger And I was out of the Thai chilies so I used sambal chili paste. YUM. Both ways were so delicious on grilled chicken thighs and legs. Tonight will be our 4th time. My BF is addicted to it. Marinade it overnight if u have time you won't be sorry!!!

Tweaks

  1. Not sure which variety of basil your recipe calls for, but I'd use Thai Purple Basil... it's got a substantially different flavor profile compared to Sweet Italian Basil, and it would certainly be a standout flavor in this recipe!
     
  2. This was a terrific recipe. I was having a bunch of people over and marinated 3 lbs. of boneless, skinless thighs with this recipe and had another recipe for the other 2 1/2 lbs. I cut each boneless thigh into four pieces and threaded the pieces on bamboo skewers. I used Asian hot pepper paste in place of the chile as I wasn;t sure what was meant by that-chili powder or diced chili peppers or sauce. I marinated it maybe 3 hours and then grilled them. This was excellent. Nine adults and 2 children went through six pounds of chicken. Most people preferred this to the other recipe. I would definitely want this again and will be forwarding the recipe as people have asked me for it.
     
  3. We enjoyed this. I used worcestershire sauce instead of the fish sauce, and I had to use dry basil and ginger (not my first choice) because it was all I had on hand. Thanks!
     
  4. Just grilled these! The whole family enjoyed--even my pickiest eater! Highly recommend. I used a small amount of Worcester sauce plus lemon juice instead of fish sauce and it was great.
     
  5. Great recipe! Thanks very much. We tried it out last night on the Weber grill with "Grilled Sweet Potato Salad" as a side. What wonderful flavors! I did not have fish sauce and used the same amount of Teriyaki sauce instead. Excellent. I also marinated the thighs over night, i.e., for a whole day. The meat was soooo tender and sooo tasty. Will do this again soon with friends.

Hi all. Currently live in Adelaide, Australia. Have 2 beautiful teenage daughters who also love cooking and trying new recipes. I absolutely love chilli - even have it on poached eggs for breakfast!! I collect cookbooks - not that I need them now I have found this website!! I do like to sit with a glass of wine and skim through looking at recipes. Ainsley Harriot is a favourite - his spaghetti with red wine bolognaise sauce is heavenly!! I have a collection of recipes dating back to the 1970's (started collecting them when I was 14) - my children keep saying they want it when I die!!(no intention of going anywhere yet!). I am now doing up 2 books for the kids with my best recipes to give them when they leave home to stop any arguments.
