Tarragon Chicken With Mushrooms

- 2 tablespoons butter
- 1⁄2 lb mushroom, sliced
- 1 chicken, cut up
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons olive oil
- 1⁄2 cup dry white wine
- 1 tablespoon chopped fresh tarragon
directions
- In a large frying pan, melt butter over medium heat.
- Add mushrooms and cook 5 minutes, until lightly browned. Remove from pan and set aside.
- Season chicken with salt and pepper. In same pan, heat olive oil.
- Add chicken and cook over medium heat until brown, about 5 minutes per side.
- Drain off excess fat. Add wine and tarragon.
- Cover and reduce heat, and simmer 25 minutes. Add reserved mushrooms and cook 5 minutes more.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
