  • Rub the fat into the flour.
  • Add sugar, salt and mix with beaten egg to a dough you can handle.
  • Cut into 2 halves and roll out.
  • Put 1 half on a plate and fill with jam or lemon curd.
  • Wet the edges and put the other half on top.
  • Trim and bake in a hot oven until golden brown.
