Sweet Potato, Chickpea & Chorizo Hash

- 1 1⁄3 lbs sweet potatoes, diced
- 1 tablespoon olive oil
- 1 large red onion, thinly sliced then quartered
- 14 ounces chorizo sausage, skinned and crumbled
- 14 ounces chickpeas, drained
- 6 large eggs
- 1 green chili pepper, thinly sliced into rings
directions
- Boil the diced sweet potatoes 8 minutes , until tender.
- Heat the oil in a large cast iron skillet, cook the chorizo 5 minutes and onions stirring frequently untill onions are soft and chorizo is done.
- Add the sweet potatoes and chickpeas cook to the degree of doneness you prefer. I like a crust.
- With a spoon make depressions for the eggs. Put the eggs in the depressions.
- Move the skillet to the broiler and broil on high until the whites are set. Sprinkle with chilli and serve.

I always barbecued and camp cooked but now that I am retired and my wife is disabled I do almost all the cooking. My preference is for recipes that are fairly simple with over the top results.
And most important I still ride my 1940 Indian!!
