- 5 cups shredded red cabbage
- 2 cups water
- 4 slices bacon
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose flour
- 1 1⁄4 cups red wine vinegar
- 1⁄3 cup water
- 1 small onion, thinly sliced and separated into rings
- 1 small apple, chopped
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
directions
- Place cabbage and 2 cups water in a saucepan. Bring to a boil over medium-high heat, cover, reduce heat, and simmer 5 to 8 minutes or until crisp tender. Drain; set maside. Cook bacon in a skillet until crisp. Drain bacon on paper towels, reserving 1 tbls. drippings in skillet. Crumble bacon; set aside.
- Add brown sugar and flour to drippings in skillet; stir until smooth. Gradually add vinegar and 1/3 cup water, stirring until smooth. Add onion and remaining ingredients; cook 5 minutes or until slightly thickened; stirring frequently. Stir in cabbage and bacon. Cool.
