Super-Easy Tofu Parmesan

"Found this many years ago on a recipe card from a tofu company... it's been a favorite with my family ever since! It's fast and easy enough for a six-year-old to make. Use soy cheese if you'd like it vegan. Use your favorite spaghetti sauce."

  • Pour a cup of spaghetti sauce in the bottom of an oiled casserole.
  • Slice drained tofu, fry in a bit of oil if you have time, and lay the slices on top of the sauce.
  • Cover with more spaghetti sauce.
  • Sprinkle with the cheeses.
  • Bake at 350 degrees for about half an hour, until cheeses are lightly browned.
  • Let stand a few minutes, then serve.
