  • Combine zucchini, mushrooms, onion, green pepper, celery and tomato juice in a small saucepan.
  • Season with salt and pepper to taste.
  • Cook over medium heat until tomato juice is reduced by half.
  • Add cheese. Lower heat and allow cheese to melt.
