"This is my family's favorite healthy Belgian waffle recipe that has whole grain goodness, no sugar, no oil, but isn't lacking in flavor or a fluffy texture. The base can be customized with add-ins such as blueberries, chocolate chips or mashed banana. If you like to meal prep, these waffles freeze and reheat well. I have successfully kept the prepared batter in the fridge overnight, although you may have to thin with water to get the right consistency.   • In a large bowl combine the first five ingredients (flour, baking powder, baking soda, salt, cinnamon) and zest if using; stir to mix.
  • In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
  • Pour the wet ingredients into the dry; stir until combined. The batter will be a bit lumpy. Let sit 10 minutes.
  • Meanwhile, prepare and preheat your waffle iron as needed.
  • After the batter has rested, check the consistency. It will be thick but spreadable.
  • Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
  • Top with pure maple syrup, fruit or whatever you fancy and enjoy!
