- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1⁄2 teaspoon orange zest (optional)
- 3⁄4 cup Greek yogurt, plain
- 2 eggs
- 1 cup milk
- 3⁄4 cup water
- 1 tablespoon vanilla
directions
- In a large bowl combine the first five ingredients (flour, baking powder, baking soda, salt, cinnamon) and zest if using; stir to mix.
- In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
- Pour the wet ingredients into the dry; stir until combined. The batter will be a bit lumpy. Let sit 10 minutes.
- Meanwhile, prepare and preheat your waffle iron as needed.
- After the batter has rested, check the consistency. It will be thick but spreadable.
- Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
- Top with pure maple syrup, fruit or whatever you fancy and enjoy!
