Subtle Spice No Chill Shot Glass Sugar Cookies

- 2 cups margarine
- 2 cups sugar
- 2 eggs
- 6 cups sifted cake-and-pastry flour
- 4 teaspoons baking soda
- 3 dashes cinnamon
- 2 dashes cloves
- 1 1⁄2 teaspoons vanilla extract
directions
- -cream butter and sugar, making sure to scrape bottom for about 3 minutes.
- -add eggs and vanilla, mix.
- -combine dry ingredients.
- -sift dry ingredients, adding in batches to wet mixture.
- -NO CHILLING REQUIRED.
- -flour surface, roll out to about 1cm thickness, use the mouth of shot glass as cookie cutter.
- - (optional, but very recommended): in small shallow dish of sugar (OR cinnamon/sugar mix) dip cookie face down, lightly coat.
- -bake on parchment for 6-7 mins, on 400.
- -cool on racks immediately.

Going through my recipe printouts had me note I missed reviewing these little gems! A review for a recipe that has been added to my Holiday Baking Cookbook is long overdue! Halved the recipe and made as posted and agree a subtle sweet tasting cookie with just a hint of spices - great tasting sugar cookies. Only change I will make come holiday baking time is no halving next time around. Thank you for sharing.
