Strawberry Foam

• Yields: 1 3/4 cups

ingredients

• 1⁄3 cup butter
• 1 cup confectioners' sugar
• 1 egg white, stiffly beaten
• 2 cups strawberries, mashed

directions

1. Cream butter thoroughly and add sugar gradually.
2. Fold in egg white and strawberries.
