- 2 cups flour
- 1 1⁄4 cups quaker steel cut oatmeal
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 eggs
- 2⁄3 cup canola oil
- 1 1⁄4 cups maple syrup
- 1 teaspoon vanilla
- 1 1⁄4 cups tollhouse semi-sweet chocolate chips
- 1⁄2 cup diced walnuts
directions
- Preheat oven to 350°F.
- In a small bowl, whisk together the flour, baking soda and salt.
- In a large bowl, combine the eggs, canola oil, maple syrup and vanilla.
- Add the flour mixture to the large bowl and mix until combined.
- Stir in the oatmeal until completely combined.
- Stir in the chocolate chips and the diced walnuts.
- Using a 1 inch cookie scoop, drop cookie dough onto a cookie sheet leaving 2 inches between the drops.
- Bake for 12-14 minutes until the cookies are set and they are starting to brown.
- Transfer the cookies to a wire rack to cool, then store in an airtight container for up to 4 days or freeze until ready to use.
