Sprite Cake

ingredients

• 1 1⁄2 cups butter
• 3 cups sugar
• 1 teaspoon lemon
• 1 teaspoon vanilla extract
• 5 eggs
• 3 cups flour
• 1 cup Sprite or 1 cup 7-Up soda

directions

1. preheat oven to 325 degrees.
2. cream butter and sugar with blender, add extracts.
3. Add eggs, one at a time; mix well.
4. alternate adding flour and sprite; mix well.
5. Pour into a floured and greased pan.
6. bake 1 hour and 30 minutes.
7. Cake should be golden brown when done.

Very moist and delicious. I baked mine in a bundt pan and put a glaze of milk and powdered sugar on top. It was gone within hours. This is a definite favorite in my house now.

I made this substituting Pomegranate 7up (limited edition) and Splenda. The cake was a pretty pink color, and though it wasn't light, it was delicious. Everyone loved it because it was gone the next day!

Baked my cake in a bundt pan and didn't think it needed any frosting or glaze. A very mosit cake with a slight lemon flavor. Nice with fruit. Thanks Jammy. Bullwinkle.
