Spinach-Apple Salad With Roquefort Cheese

  • Tear spinach into bite size pieces, if needed and place in a large bowl and set aside.
  • Combine apple and 1 tbl vinegar in a bowl and toss gently, et aside.
  • Combine remaining 2 tbls vinegar, papaya, an next 3 ingredients in a small sauce pan, stir well and bring to a boil, remove from heat and immediately pour over spinach, tossing to coat.
  • Top with apple mixture and cheese, tossing gently.
  • Serve NOW!

  2. mmmm yum. Had this for lunch and what a great salad. couldnt find papaya at the store, or mango (My substitute when its raw) however the strawberries made up for it. delicious. oh the cheese i used was "borgonzola" half the price of roquefort and cambozola
     
  3. Very good however I would allow the dressing to cool just slightly before pouring on top next time, it caused the spinach to shrink slightly, the combinations of ingredients was wonderful, thanks Nimz!...Kitten:)
     
  4. This was very interesting! I didn`t like the smell of the dressing as it cooked. BUT! when poured and eaten it was very very good. The heat of the dressing warmed the cheese to a nice creamy texture. I used 6 ounces of baby spinach, 1 apple, and kept the rest of the ingredient amounts as directed, Serving 2. I did have extra dressing and only poured it over the dressing to be tossed just before eating.

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member. It's just a tad boring now and just another recipe site like all the rest. Sad.
