DIRECTIONS

  • In a large pan, heat the oil. Add the diced onions and sauté until soft.
  • Add the minced garlic to the onions and sauté until the garlic is fragrant.
  • Stir in all of the spices, water, wine and tomatoes and cook for several minutes.
  • Add the sliced zucchini and peppers and cook until the zucchini is tender.
  • Taste and adjust salt and pepper.
