Spicy-Sweet Zucchini Cubes

ingredients

• 1⁄4 cup red wine vinegar
• 1⁄4 cup dry red wine
• 1⁄4 cup honey
• 1 tablespoon chopped red onion
• 1 tablespoon Worcestershire sauce
• 1 tablespoon olive oil
• 1⁄2 teaspoon chili powder
• 1⁄2 teaspoon ground cumin
• 1⁄4 teaspoon ground red pepper
• 1 clove garlic, minced
• 4 cups cubed zucchini

directions

1. Combine the first 10 ingredients in a microwave safe bowl, and stir well.
2. Microwave at HIGH 2 minutes or until mixture is hot; stir in zucchini.
3. Cover; marinate in refrigerator at least 1 hour.
4. Drain and serve.
