  • Butter a 9x13 pan.
  • Preheat oven to 350 degrees.
  • Dough ferment:

  • Combine sourdough starter, Greek yogurt, and whole wheat flour in a bowl cover and leave at room temperature over night or at least 3 hours.
  • Prepare spice mixture:

  • Mix all the spices together. Place 1 tablespoon of spice mixture in a bowl and add the 1 tablespoon flour and 1 tablespoon sugar toss into the 4 cups of diced apples. Set aside.
  • Topping:

  • Combine brown sugar, chopped pecans or walnuts, oats, flour, ground flax seed, 2 tablespoon spice mixture, unsalted organic butter softened. Set aside.
  • Dough:

  • Add to the remaining spice mixture salt, baking powder, and baking soda.
  • Beat butter in a mixer and add sugar until light and fluffy, add one egg at a time. until light and fluffy.
  • Add vanilla, spice mixture and the fermented dough. Just until well combined.
  • Toss in apples coating with the dough.
  • Place in prepared pan, top with the streusel mixture.
  • Bake for 50-60 minutes.
