Overnight Fermentation
- 1 cup sourdough starter
- 3⁄4 cup Greek yogurt
- 1 cup organic whole wheat flour

Cinnamon Spice Mixture
- 3 tablespoons cinnamon
- 1⁄4 teaspoon ground ginger, nutmeg, cloves, allspice, mace each

Additional spice mixture
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder

Batter
- 8 tablespoons unsalted butter, room temperature
- 1 cup organic sugar
- 2 large organic eggs, room temperature
- 1 teaspoon vanilla

Apples
- 4 cups baking apples, diced
- 1 tablespoon cinnamon, spice mixture
- 1 tablespoon flour
- 1 tablespoon sugar

Topping
- 1⁄2 cup light brown sugar
- 1 cup chopped pecans
- 1 cup oats
- 1⁄2 cup all-purpose flour
- 2 tablespoons ground flax seeds
- 5 tablespoons unsalted butter, room temperature
- 2 tablespoons cinnamon, mix

- Butter a 9x13 pan.
- Preheat oven to 350 degrees.

Dough ferment:
- Combine sourdough starter, Greek yogurt, and whole wheat flour in a bowl cover and leave at room temperature over night or at least 3 hours.

Prepare spice mixture:
- Mix all the spices together. Place 1 tablespoon of spice mixture in a bowl and add the 1 tablespoon flour and 1 tablespoon sugar toss into the 4 cups of diced apples. Set aside.

Topping:
- Combine brown sugar, chopped pecans or walnuts, oats, flour, ground flax seed, 2 tablespoon spice mixture, unsalted organic butter softened. Set aside.

Dough:
- Add to the remaining spice mixture salt, baking powder, and baking soda.
- Beat butter in a mixer and add sugar until light and fluffy, add one egg at a time. until light and fluffy.
- Add vanilla, spice mixture and the fermented dough. Just until well combined.
- Toss in apples coating with the dough.
- Place in prepared pan, top with the streusel mixture.
- Bake for 50-60 minutes.
