Special Spinach

"This recipe was on a bag of spinach but asked for Bruchetta mixture that I didn't have so I improvised and came up witht his great combination."

  • Heat olive oil in a large skillet on medium high heat. Add the garlic and shallots; sauté for about 1 minute.
  • Add spinach and tomato to the pan; stir with garlic mixture.
  • Cover the pan and cook for an additional minute.
  • Add balsamic vinegar. salt and pepper to taste.
  • Sprinkle wih parmesan cheese.
  • Serve immediately.
