Sparkling Meyer Lemon Cocktail

"This is great for a cookout. Great cool drink. Meyer lemons are a cross between a lemon and a mandarin orange in taste. If you can't find Meyer lemons, the flavor won't be as complex. For every 1/4 cup Meyer lemon juice, substitute 3 tbsp lemon juice plus 1 tbsp orange juice plus 1/2 tsp sugar. Prep time includes chilling time."

  • 1 cup water
  • 13 cup sugar
  • 1 rosemary sprig
  • 1 cup fresh meyer lemon juice, chilled (about 8 lemons)
  • 13 cup vodka, chilled
  • 2 cups prosecco or 2 cups other sparkling wine, chilled

  • Combine first 3 ingredients in a microwave-safe liquid measuring cup. Microwave at HIGH for 2 1/2 minutes; stir until sugar dissolves. Let stand 10 minutes; discard rosemary. Chill.
  • Combine sugar mixture, juice, vodka, and prosecco, stirring gently. Serve immediately.

  1. I loved the sparkling tartness with the hint of rosemary. I had to follow the well written directions for substituting lemon and orange juice. The flavors were still intense. I used a pink sparkling wine. This cocktail was delicious. I will add it to my cookbooks with pleasure.thank you for posting this recipe.
