Spanish Roasted Tomato Salad

"A simple but lovely way of serving tomatoes. This would go nicely with a Spanish tortilla and even as part of a tapas meal. I found the recipe on the Orce Serrano Hams website. Caster sugar is simply superfine sugar."

  • Preheat oven to a medium heat.
  • Half the tomatoes and place in a single layer in a roasting tin.
  • Drizzle with the oil and vinegar and mix well.
  • Roast for about 20 minutes and then add the sugar.
  • Roast for another 25 minutes. When they are ready, they will be soft and lightly caramelized.
  • Serve warm.

  1. These tomatoes came out carmelized beautifully, were so juicy and luscious! I added the sugar after they were in the oven for 20 minutes, and roasted them at 350. I think when making them again, I'd probably add garlic, as I'm such a garlic fiend, and if the tomatoes are super sweet, would forego the sugar. Thanks for posting the recipe! Made for ZWT5.

I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship.
