ingredients
- seedless watermelon, sliced into 12 pyramid shapes (3-inch-4-inch tall)
- sweetened whipped cream (I made my own and added a little bit of maple syrup)
- 8 -12 ounces white chocolate, shaved (I used a cheese grater with the large holes)
- 3⁄4 cup sweetened flaked coconut

Optional
- 1 mini chocolate chips (read directions below) or (1 5/8 ounce) hershey's cookies and cream candy bars (read directions below)

- Mountain: arrange the pyramids on a large platter or individual dessert plates.
- Snowcap: Top each pyramid with whipped cream. Decorate with the white chocolate and shredded coconut and serve. Note: do not add the whipped cream until just before serving.
- Optional: garnish each snowcap with a few mini chocolate chips OR: I finely grated a Hershey's 'Cookies 'n' Cream' candy bar because I don't always have the best luck finding mini chocolate chips. I think mini chocolate chips are more of a seasonal food item-at least where we live.
