Smoked Salmon, Onion, & Cucumber Brunch Salad

- 1 lb smoked salmon, good quality
- 1 sweet onion, Preferably vidalia
- 1 English cucumber, thinly sliced in half moon shapes
- 1 tablespoon rice wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 tablespoon parsley, fresh chopped
- 2 teaspoons chives, fresh chopped
- 1 teaspoon lemon zest, finely minced
- 1 clove roasted garlic, finely minced
- salt
- pepper
- cream cheese
- bagel
directions
- In a glass bowl, whisk together vinegar, olive oil, honey, garlic, and lemon zest.
- Add onions, cucumbers, chives, parsley, and smoked salmon to the bowl and toss. Season with salt and pepper to taste.
- Serve immediately with cream cheese and bagels. This can be refrigerated for up to 4 hours maximum.
- I like this dish for brunch with a crisp pomegranate mimosa :).
